For the Salad
- 1-2 heads romaine lettuce
For the Dressing
- 1 cup cashews (soaked for 2-4 hours)
- 1/4 cup water
- 2-3 tablespoons apple cider vinegar
- 1 tbsp olive oil
- 1 clove of garlic
- salt and pepper, to taste
For the Dairy-free parmesan
- 1/4 cup almond flour or ground nuts
- 3 tbsp nutritional yeast
Instructions
- 1. Soak the cashews in water for 2-4 hours. Drain and rinse.
- 2. Blend the cashews, water, apple cider vinegar, oil, garlic and spices in a high-powered blender until smooth. Add more liquid if needed.
- 3. Wash the romaine lettuce under running water and pat dry with a clean kitchen towel. Chop the lettuce and place it in a large mixing bowl.
- 4. Add about 3/4 of the dressing (or all for a more "saucey" salad). Serve with dairy-free parmesan or croutons. Enjoy!
